Couscous Salad

A simple laid back Monday recipe from MVeeskitchen

soft boiled eggs
1 cup of uncooked couscous
Bell peppers
Olive Oil

Bring the chicken or vegetable broth to a boil and then stir in the couscous. Cover the pot and remove from the heat.  Set aside.

Add olive oil and garlic in a pan, swirl until fragrant. Add peppers, kale and couscous. Topped with eggs and serve.

Makes 2 servings
