Cheese, Chillies and Cranberry Pasta

Cheese, Nuts & Cranberry Pasta - an adaptation from all you need is Cheese Winter 2010 Issue
My version is quite different from the original recipe - it calls for Canadian Swiss, Cheddar, Gouda, Mozzarella, Provolone, Brie and Blue - I picked three different types - Cranberry Goat, Australian Provolone and Mimolette - not for a special reason but that's what I have in my kitchen. All three went well with reduced milk and Chardonnay. I saute├ęd garlic with butter instead of shallots, substituted chicken/turkey broth with beef and added dried chillies while simmering. The chilies give a little kick to the savoury sauce and balance the sweetness of the cranberries.
